[Breaking] Allow application to reject reads/writes with an ATT error - #429
The GATT access handler discarded the outcome of the characteristic
write callback and always returned 0 (success) to the peer, so an
application had no way to reject a write with an ATT error even under
write-with-response.
This replaces the the non-return value callbacks for characteristic and descriptor
read/write callbacks with callbacks that return an enum value from the added NimBLEGattStatus enum. This will allow applications to accept or deny value access
with a standard BLE response code.
A rejection reaches the peer only for write-with-response; a write
command is unacknowledged so the code is dropped by the stack, by spec.
Read and write callbacks can return ATT status codes to accept or reject requests.
Write callbacks receive the proposed value before it is stored, allowing applications to validate it.
Status callbacks receive connection information.
Bug Fixes
GATT responses now reflect callback results. Rejected writes do not update characteristic or descriptor values or add data to the stream receive buffer.
Attribute values handle initial buffer-allocation failures more safely.
Compatibility
Callback signatures have changed; the onStatus overload without connection information is no longer available.
No actionable comments were generated in the recent review.

Walkthrough
Arr, characteristic and descriptor callbacks now return NimBLEGattStatus. The server propagates callback results to GATT requests. Write callbacks receive the proposed NimBLEAttValue, and stored values update only when callbacks return success.

Summary
GATT status and event contracts src/NimBLELocalValueAttribute.h, src/NimBLECharacteristic.h, src/NimBLEDescriptor.h, src/NimBLEDevice.h, src/NimBLEStream.h
NimBLEGattStatus defines success and ATT/GATT error values. Read and write events return status values. Write events and callbacks receive NimBLEAttValue&. BLEGattStatus aliases NimBLEGattStatus. The stream callback declaration matches the updated contract.
Characteristic and descriptor callback handling src/NimBLECharacteristic.cpp, src/NimBLEDescriptor.cpp
Read events return callback status. Write callbacks receive the proposed value, and stored values update only on success. Default callbacks return success.
Server dispatch, stream writes, and examples src/NimBLEServer.cpp, src/NimBLEStream.cpp, src/NimBLEAttValue.cpp, examples/NimBLE_Server/main/main.cpp
The server propagates event status and checks write-value allocation and assembly. Stream callbacks run before RX buffering and can reject writes. The example uses the updated callback signatures. NimBLEAttValue resets its fields after initial allocation failure and copies input only when the buffer exists and the length is positive.

Thanks @Nicba1010, I like this change. I'm considering maybe making this a breaking change to avoid adding more callbacks but this is good as well. Maybe we could rename these to be a little more clear as to their function, something like onRead/WriteRequest, what do you think?
Thank you for taking a look :). I made it this way so you don't have to do a major release (as is usually with changes as breaking as these) unless you have it planned, but I'm fine both ways. Regarding the naming, anything is fine to me, I'm not particularly opinionated there :).

Return the typed status from both storage copies, matey.
After a successful callback, each writeEvent assigns m_value = val, which discards storage-copy failure and can report success while retaining the old value. These methods return the scoped NimBLEGattStatus, so BLE_ATT_ERR_INSUFFICIENT_RES cannot be returned directly. Use NimBLEGattStatus::InsufficientResources for both methods.

Arrr, enforce read authorization for direct Read Blob requests.
For a nonzero Read Blob offset, NimBLE allocates a new empty ctxt->om. The guard skips pAtt->readEvent(peerInfo), while NimBLECharacteristic::readEvent is the callback path that returns the read status. The handler then appends the value, so a peer can bypass the callback and obtain the requested suffix of a protected value.
Distinguish an authorized continuation from a new Read Blob request without using ctxt->om->om_len as the authorization check. Track authorization per peer and attribute, or apply equivalent per-request state.
