Description

Docstrings:

• One-line title, body paragraph describing the pattern/APIs demonstrated
• Prerequisites: block with exact ollama pull / pip install commands
• 4-space-indented Usage: with the full run command

READMEs:

• all 4 replaced with a description + ## Examples table
• content (pipeline diagrams, code samples, concept explanations) was verified present in the site docs before removal

Other fixes:

• Removed unused from mellea.backends import model_ids imports in both information_extraction/ scripts
• Fixed ollama pull tags to match actual ModelIdentifier.ollama_name values
• Added missing pip install docling to mellea_pdf.py

Testing

• Tests added to the respective file if code was changed
• New code has 100% coverage if code was added
• Ensure existing tests and github automation passes (a maintainer will kick off the github automation when the rest of the PR is populated)
